Tuna Bake Pasta

Ingredients

  • 300g dried macaroni pasta, cooked
  • 40g Lurpak unsalted butter
  • 2 tablespoons plain flour
  • 2 cups reduced-fat milk
  • 3/4 cup reduced-fat grated pizza cheese
  • 425g can tuna in springwater, drained, flaked

Method

  1. Preheat oven to 220°C/200°C fan-forced. Lightly grease an 8 cup-capacity ovenproof dish. Cook pasta in a medium saucepan of boiling, salted water, following packet directions, until tender. Drain, reserving 1/4 cup cooking liquid. Return pasta to pan.
  2. Melt butter in a saucepan over medium heat. Add flour. Cook, stirring, for 1 minute or until bubbling. Remove from heat. Gradually stir in milk until combined. Return to heat. Cook, stirring constantly, for 3 to 4 minutes or until sauce boils and thickens. Remove from heat. Stir in 1/4 cup cheese. Season with pepper.
  3. Add to pasta with tuna and reserved cooking liquid. Toss to combine. Spoon mixture into prepared dish. Sprinkle with remaining cheese. Bake for 12 to 15 minutes or until cheese is melted and golden. Serve.

Banana Pancakes

Ingredients

  • 1 overripe banana
  • 1 egg
  • 2 tablespoons self-raising flour
  • Butter for cooking

Method

  1. Mash banana in a medium bowl until smooth. Whisk in egg, then flour until smooth. Set aside for 5 minutes.
  2. Lightly grease a medium non-stick frying pan with oil and heat over medium heat. Spoon 2 tablespoons batter into the pan and spread out with the back of a spoon until 1cm thick. Repeat with remaining batter to make 2 more pancakes.
  3. Cook for 1–2 minutes or until golden. Turn and cook for 1–2 minutes or until pancakes are golden and cooked through. Serve with syrup of choice, fruit toppings etc.

Pantry Pasta Sauce

Ingredients

  • 1 x tin tomatoes
  • 1 x thinly sliced clove of garlic (or 1 tsp jarlic)
  • 1 x diced onion
  • Dried chilli flakes (optional)
  • Olive oil
  • Splash of balsamic vinegar
  • Salt & pepper

Method

  1. Heat good glug of oil in pan over medium heat
  2. Gently fry onion and garlic and chilli flakes until soft and translucent but not brown
  3. Add tomatoes and balsamic vinegar and simmer gently until a jammy consistency is reached  
  4. Season to taste
  5. You shouldn’t need to add any sugar if you cook the tomatoes slowly.  It will create it’s own sweetness.
  6. Serve with pasta
  7. Top with grated parmesan cheese and fresh parsley or basil from your new herb garden!

Easy Corn Frittersbest pantry recipes

Ingredients

  • Flour
  • Baking Powder
  • Milk
  • Canned Corn
  • S&P

Method

  1. Mix all ingredients together to make a thick batter. 
  2. Add herbs of choice if you have any.
  3. Shallow fry in some oil until crispy.
